Pickled Gazpacho
Serves 6
Ingredients
2-1/2 cups chopped fresh tomatoes
1 medium zucchini, sliced
1/2 cup sweet fresh cucumber pickles
2 tablespoons sweet pickle liquid
2 tablespoons chopped chives
Dash oregano
Instructions
In a blender or food processor, blend half of the ingredients until finely chopped. Pour into bowl. Repeat with remaining ingredients. Chill thoroughly.
