Tuscan Tuna Salad

What You Need: 

1 (12-ounce can ) chunk tuna, drained and flaked
1 (15-ounce can ) white beans, rinsed and drained
1/4 cup diced roasted red bell peppers
2 Tbsp. diced red onion
2 Tbsp. sliced black olives
1 cup sliced pepperoncini
1 stalk celery, sliced
2 Tbsp. snipped basil
2 Tbsp. snipped Italian parsley
3 Tbsp. olive oil
1 Tbsp. balsamic vinegar
1 clove garlic, crushed
1/2 tsp. fennel seed
1/2 tsp. ground pepper
Garnish: Radicchio leaves and toasted pine nuts
 

Combine the first 9 ingredients in a mixing bowl. Mix together the rest of the ingredients in a small bowl till well blended. Toss with the salad mixture and place on a platter. Surround with the radicchio leaves and garnish with the pine nuts.
